This over-the-top double hopbacked Double IPA was brewed in Episode 71: Hop Madness 2012.
HOPSPLOSION DOUBLE IPA
For approx 10 gallon batch
Water: Carbon filtered Minneapolis tap water. Roughly 1 tsp Gypsum added to boil
Target OG: 1.078
- 12.5 lbs MaltEurop 2-Row
- 10 lbs Warminster Maris Otter
- 2.5 lbs Fawcett's Optic Pale Ale Malt
- 5 lbs Belgian Munich Malt
- 2 lbs Torrified Wheat
- 4 oz UK Extra Dark Crystal
- 1.5 lbs Corn Sugar (60 min)
Mash grains at 149*F for 90 minutes.
Collected 12.8 gallons pre-boil @ 17 BRIX
2 oz Simcoe pellets hops (12.2% aa) - First Wort Hop
Then as you see in the episode, using a March pump we transferred the hot wort through a Blichmann HopRocket into another 10 gallon kettle which we used as a GIANT hopback with 1 lb of Simcoe whole leaf hops and 1 lb of Centennial whole left hops... and some Don Osborn yard Centennials for the heck of it. Of course, this kettle had a false bottom installed. Steep the wort for 15-30 minutes, making sure hops are wetted with wort. Place the lid on the kettle while the hops are steeping.
After steeping, run wort through plater chiller and into fermenters. You will likely lose some wort to the hop matter. We gathered a total of 8 gallons of wort... then top off with water. We ended up with an OG of 1.068. A titch off target OG, but no biggie, still a nice big beer.
In one fermentor, we pitched 3 smacked packs of Wyeast 1056 American Ale. In the other, three packs of Wyeast 1028 London Ale.
Ferment to target FG of 1.011-1.014.
